Meet the team…
Beginning his hospitality career working in the bottle shop at Kelly’s Hotel Cranbourne, Tony worked his way to a management role by the age of 21 years. A well sought after General Manager, he worked in a number of local hotels before purchasing his own restaurant “Tides” in 2010. He refers to his employee’s as his “Tides Family” and has based his management style around this. Tony has made it his aim to ensure all guests choosing to spend their precious leisure time at his restaurant, leave having had a positive and enjoyable experience. In his own leisure time he can often be found on Westernport Bay and says “there is nothing like the feeling when a big snapper starts to run with your bait, the bend of the rod once hooked, and the thrill of the fight”.

Tides are extremely proud of our team of Chefs who are highly skilled and incredibly creative in the kitchen. Produce is sourced locally where possible and is always fresh! With a menu that changes with the seasons our Chefs are free to experiment with new and exciting dishes that leave our customers crying for more. When accompanied with a cool beverage from the bar, we’re sure you’ll be relaxed and happy you called in.

-A local in Tooradin since 2010, married with 2 beautiful children, who go to the local primary school and are active in local community sports clubs. Mandy’s began her career working as a waitress at Cranbourne RSL, while also working as a bookkeeper. Being a mad AFL fan, you’ll find her cheering on her beloved Carlton…Oh Well, we can’t win them all…she also has a passion for fermenting and cultured food. Mandy loves to chill with the family, go fishing and going to the beach. She loves her job and all the wonderful people she meets and the smiles along the way.
From the humble beginnings of working in a Fish & Chip shop at the age of 16 years, Wayne discovered his love for cooking working in a local hotel kitchen. He began an Apprenticeship enjoying the lifestyle, the “mate-ship” relationships formed with colleagues and being able to have a good time while being in a fairly frantic environment. His inspiration comes from a number of places, dining out, books, magazines and television shows with Celebrity Chefs. For Wayne its about using fresh ingredients and local produce to create something amazing on a plate. At home his favourite dish is a simple roast lamb with vegetables, mint sauce and gravy, he says “you can’t beat it”. Wayne’s greatest joys are his two children, spending time with his wife Jo and he enjoys watching sport on television.
As a young boy Andrew enjoyed watching cooking shows and soon fell in love with cooking. He started his Apprenticeship at the age of 16 years completing his training with Kelly’s Hotel in Cranbourne, Andrew gained inspiration from cook books and loved creating unique and tasty dishes for people to enjoy. An avid Melbourne AFL supporter Andrew enjoys watching sport and playing golf with friends.
Liz became a Chef by circumstance when her mother took ill and Liz filled in on her job at a home for the elderly working in the kitchen. While taking care of her mum, she grew to really enjoy the kitchen. Liz was trained from scratch at a restaurant in Mornington before accepting a position with the Frankston RSL and completing her Certificate 3 in Commercial Cookery and Certificate 4 in Patisserie. In her leisure time Liz enjoys her garden, camping with her 3 children and her fur baby Rascal, a five year old Beagle.
Jake is our 2nd year apprentice who has become a major part of the Tides family. In his previous job he started out washing dishes, Tides saw his potential and offered him an apprenticeship, and we were right, he has a fantastic passion for cooking. At home he manicures a vegetable garden and loves to grow fresh herbs to bring in to work. During his spare time he loves spending time catching up with family and friends as we as doing a bit of fishing, he’s a lover of seafood, both eating and cooking them. He’s the baby of the team and we’re so pleased he’s a part of our team.
